Beat whipping cream and vanilla until stiff peaks form.
Separately, beat cream cheese and sugar together.
Beat the whipped cream into the cream cheese mixture. Do not beat for too long, or the whipped cream will dissolve.
Spread the mixture in the crust. Wait until the crust has cooled down so that the whipped cream does not dissolve.
Top with pie filling.
Chill.
Serve.
Notes:
This recipe makes a cheesecake that is quite different than the normal kind. Cheese Pie might be a more accurate name, but doesn't sound nearly as good.
