Light and Fluffy Cheesecake

Makes one pie-plate-sized cheescake

Crust:

1 1/2 cups 375 mL graham cracker crumbs
1/3 cup 75 mL butter
3 Tbsp 45 mL white sugar

  1. Melt butter in a pie plate.
  2. Seperately, mix graham cracker crumbs and sugar.
  3. Mix crumb mixture into melted butter.
  4. Form mixture into pie crust shape.
  5. Bake at 350F (175C) for 10 minutes.

Filling:

1 cup 250 mL whipping cream
1 tsp 5 mL vanilla
1 1 250g package cream cheese
1/2 cup 125 mL white sugar

  1. Beat whipping cream and vanilla until stiff peaks form.
  2. Seperately, beat cream cheese and sugar together.
  3. Beat the whipped cream into the cream cheese mixture. Do not beat for too long, or the whipped cream will dissolve.
  4. Spead the mixture in the crust. Wait until the crust has cooled down so that the whipped cream does not dissolve.
  5. Top with pie filling.
  6. Chill.
  7. Serve.
