Citrus Hazelnut Shortbread Cookies

Ingrediants:

DRY:
4 cups 1000 mLwhite flour
1/2 tsp 2 mL salt
WET:
2 cups 500 mL butter
1 1/3 cups 300 mL brown sugar
2/3 cups 150 mL ground hazelnuts
4 tsp 20 mL lemon and/or orange peel/zest
1/4 cup 50 mL milk
4 tsp 20 mL vanilla extract

Instructions:

  1. Mix sugar, hazelnuts, and lemon/orange peel/zest.
  2. Beat butter until smooth.
  3. Add sugar mixture, milk, and vanilla extract to butter.
  4. Add flour and salt to "wet" mixture. Start by adding 1 1/2 cups of flour and the salt. Then add the rest of the flour one cup at a time. Mix well.
  5. Roll out the dough to 1/8" (0.5 cm) thickness. You will probably have too much dough to roll out all at once.
  6. Cut out cookies with cookie cutters.
  7. Place the cookies on an ungreased cookie sheet.
  8. Gather up the scraps from around the cookies and put them to the side. They can be rolled out to make more cookies.
  9. Repeat steps 5 - 8 until there is no more dough.
  10. Bake at 350°F (175°C) for 6 - 10 minutes.
  11. Leave the cookies on the cookie sheet for 1 minute before moving them to a cookie rack.
