Coconut Chocolate Chip Cookies
Makes 100
Ingrediants:
DRY: |
2 cups | 500 mL | white flour |
3 cups | 750 mL | graham cracker crumbs |
4 tsp | 20 mL | baking powder |
WET: |
1 cup | 250 mL | butter |
2 14oz cans |
2 14oz cans |
sweetened condensed milk |
2 2/3 cups | 650 mL | coconut |
EXTRA: |
3 cups | 750 mL | chocolate chips |
2 cups | 500 mL | chopped walnuts |
Instructions:
- Beat butter and sweetened condensed milk until smooth.
- Beat in coconut.
- Seperately, mix flour, graham cracker crumbs, and baking powder.
- Add "dry" mixture to "wet" mixture in thirds.
- Beat in the chocolate chips and walnuts.
- Form into "walnut-sized" balls (2.5 cm / 1 inch) and place on an ungreased cookie sheet.
- Bake at 375°F (190°C) for 8 - 10 minutes. They will spread slightly.
Notes:
- I used to have this recipe with only 1 cup (250 mL) white flour. You get more cookies this way.
