Vegetable Pasta Sauce

Ingredients:

4 - 6 cups 1000 - 1500 mL vegetables
good choices include
  • mushrooms
  • bell peppers (green peppers, red peppers, etc.)
  • broccoli
  • cauliflower
  • celery
  • bok choy stems
  • carrots
  • onions
1/4 cup 60 mL olive oil, canola oil, or melted butter
1 tsp 5 mL basil
1 tsp 5 mL oregano
1 tsp 5 mL salt
1/4 tsp 1 mL pepper
1/3 cup 80 mL white flour
2 cups 500 mL milk
OPTIONAL:
4 - 6 cups1000 - 1500 mLchopped fresh spinach
1 cup 250 mL grated cheese

Instructions:

  1. Chop the vegetables into bite-sized pieces. This means pieces bewteen 1 and 2 cm (1/4 - 1/2 inch) across. Grate carrots instead of chopping them.
  2. Mix together oil, vegetables, and spices.
  3. Microwave the vegetable mixture on high power for 5 minutes. If they are not soft yet, stir them up and microwave for another 2 minutes. Repeat until the vehetables are soft.
  4. Stir in the flour.
  5. Microwave on high power for 2 minutes.
  6. Stir in the first half of the milk 60 mL (1/4-cup) at a time. After that, stir in the rest of the milk all at once.
  7. Microwave on 80% power for 2 minutes at a time, stirring every 2 minutes. You are done when the mixture is thick and boils.
  8. Stir in the spinach and microwave for 2 minutes.
  9. Stir in the cheese.
